
Strawberry Rose Chia Parfait
Rosewater and Strawberry Chia Parfait is a delectable way to add more chia seeds into your diet. Chia offers some wonderful benefits such as fiber, protein and omega-3 fatty acids. Moreover, the sticky consistency of soaked chia seeds are said to be cleansing to the gut. These nutritious little seeds are considered to be deeply hydrating. This was one of my go to recipes for yoga retreats when I wanted to make the day extra special.
Ingredients
Porridge
- 5 tbsp organic chia seeds
- 1 tbsp maple syrup
- ½ tsp rosewater
- ¾ cup coconut water, soy milk or water + 2 tbsp
Cream
- 1 cup Unsweetened, Greek yogurt or labneh
- 2 tbsp maple syrup
- ¼ tsp vanilla
- ½ tsp rosewater
- 1 pinch beet powder (optional, to make the yogurt pink)
Fruit
- 1 cup chopped organic strawberries
- ½ tsp sugar or monk fruit
- organic edible rose petals, optional
Instructions
- Place chia seeds, maple syrup, rosewater in a mason jar or another container with a secure lid. Stir. Place the lid and shake to completely combine. Let the mixture sit for at least 10 minutes. I like to place it in the fridge and let it sit overnight. The chia will absorb the liquid and swell creating a thick porridge like consistency. In the morning, I check the consistency, adding chia or liquid to get the consistency just right. I generally have to add another teaspoon of chia. Give the porridge a good stir to dissolve any lumps.
- Mix yogurt with maple syrup, rosewater and beet powder, if you are using it. Set aside. You can also prepare this the night before. Just store it in the fridge until you are ready to use it. Alternatively, you can skip this entirely and just buy some strawberry yogurt.
- Mix the fresh, chopped strawberries with the sugar.
- Assemble, your parfaits. Take a small glass and fill the bottom with sweetened strawberries. Add the chia porridge. Add the prepared yogurt. Garnish with rose petals. Enjoy
Notes
I like to use fresh strawberries, but you can substitute frozen strawberries. I recommend that you purchase non-sweetened strawberries and sweeten them yourself, as needed. The sweetened strawberries are often times excessively sweet.
