An important part of self-care that is frequently overlooked is: cooking. The foods we eat affect our physical, mental and emotional health. In our fast food culture, we allow entities that do not have our best interest in mind to nourish us. To improve our health, we must prepare our own foods and our foods must include whole foods especially vegetables and fruits. Learning to eat fruits and vegetables presented a learning curve for me. I did not grow up eating a lot of fruits and vegetables. As a young adult, I knew eating vegetables was important, but I did not enjoy eating them because I did not know how to prepare them. It has taken sometime to learn to prepare vegetables in a manner that I enjoy. Here I share some vegetarian recipes that have become staples in my household.
